Tahini Dressing

The garden is now chock-full of sun-warmed tomatoes on the vine and cucumbers that seem to grow bigger by the day – see my photos below.

There’s enough to provide sides to meals for a little while to come, so I’ve been looking out ideas for tasty dressings to vary things up a little.

I’m a big fan of tahini – the spread that is made from ground roasted sesame seeds. In fact, tahini on a slice of wholemeal toast is one of my favourite snacks. Its taste is reminiscent of peanut butter, but without the sugar. It is said to have a number of health benefits in a diet, being a good source of fibre, protein and healthy fats.

I’ve used it in a stir fry sauce before, and wanted to incorporate it in a salad dressing. Following some research, I settled on a recipe by Hugh Fearnley-Whittingstall. A tablespoon of tahini is added to core ingredients of olive oil, runny honey and cider vinegar. Shake it up in a jar till it’s rich and creamy, then drizzle over your salad, with a sprinkling of sesame seeds to top it off.

Servings

This should be enough to go with a couple of week night meals for 2 – keep the screw top jar in the fridge and use as you wish.

Timings

10 mins to prepare.

You Will Need

  • a clean screw top jar or container
  • 1 tbsp tahini
  • 4 tsp cider (or white wine) vinegar
  • 2tbsp extra virgin olive oil
  • 1 tbsp runny honey
  • a couple of twists of sea salt and ground black pepper
  • half a clove of garlic, crushed (optional)
  • sesame seeds to sprinkle

Method

  1. Put all the ingredients (other than the sesame seeds) in the screw top jar and shake well to combine. Pour over your choice of salad and sprinkle the sesame seeds on top.
  2. Er, that’s it.

Customise it!

Add more black pepper if you wish. A squidge of lemon juice might be nice. If the consistency is too thick, just add a few more drops of olive oil. Why stop at salad – drizzle it on a baked potato, or use as a dip for fries.

Here’s a song I heard on the radio this week, which I hadn’t heard in a long time. The band who recorded it are now in their 45th year, no less, with a hectic tour schedule this summer. I very much liked UB40 in their early years, and went to see them live in their home town of Birmingham. I remember the thudding bass and drums of their reggae beat, and that they did extended dub versions of some of their tracks. I do feel they lost their edge a little when they started doing cover versions of older songs, though it clearly brought them commercial success.

Dorset Calling

This week, while staying close to the English south coast, I enjoyed a day in the old town of Wimborne in the county of Dorset.

At the centre of the town is the impressive Minster, a church that has stood here since the 12th Century, no less (see my photos above and below). It is still in service and visitors can enter for free to explore its charms.

The surrounding market town is home to many other very old buildings, some dating from the 15th, 16th and 17th Centuries. Many are now independent cafes and delicatessens, with an accent on food and drink produced locally.

Unable to resist its foodie charms, temptation got the better of me and I came back with a reasonable haul of local produce.

Initially I was looking for some Dorset Blue Vinny, a well-regarded local cheese, but opted instead for the less well-known Cranborne Blue from the Book & Bucket Cheese Company. A local producer, they started up during Covid to make use of a nearby farmer’s milk surplus. They are now thriving and winning awards.

I am slowly working my way through the complete range of Dorset Tea, a company with its origins in Bournemouth, and bought some of their Mint Tea blend on this occasion.

Apples feature strongly in foods around here (it is said that Dorset was once home to 10,000 acres of apple orchards). I picked up a Cider Chutney from Southbourne producer Dorset Made Food , and a can of Muddy Scamp from the Purbeck Cider Company.

I couldn’t leave Wimborne without a can of Corbel, a West Coast IPA from the town’s own craft brewery Eight Arch Brewing Company.

I’m pleased to report that, since my previous post (see Cranberry and Pistachio Cookies) the sun has indeed come out again, and that I have been back to the beach for more sea swimming. Music wise, I was ecstatic to get a ticket for Queens of the Stone Age when they tour this November. I have seen them three times before and they bring a lot of excitement to the stage. You can expect this to be the subject of a future post.

All in all, this seems an aptly titled track to add to the ADK Playlist (I can’t recommend the nutrition-free diet that Josh Homme sings about, however): QOTSA with Feel Good Hit of the Summer.

Summer Squash Roasted Peppers

Summertime patty pan squashes are now starting to arrive in our farm shops and market stalls. They rarely feature on supermarket shelves, however, and consequently many of us are unsure how to prepare and cook with them.

My favourite method is to chop them into a roasting pan drizzled with olive oil, and place in the oven at 180C for about 20 mins. The chopped squash pieces sweeten and caramelise, and can then be used in a variety of dishes.

In this recipe, I have blended them with mashed kidney beans, tomatoes, onions and chilli in a stuffing for roasted peppers. The squash adds texture and sweetness. With the stuffed peppers emerging lightly charred from the oven, it all makes for a splendid looking vegetarian, and vegan, main, served with side veg of your choice.

Servings

4 adult servings.

Timings

20 mins to roast the squash before adding it to the rest of the stuffing mix. Then a further 25 mins to roast the filled peppers.

You Will Need

  • 1 patty pan squash
  • 2 peppers, red, orange or yellow
  • 1 garlic clove
  • half an onion
  • 1 medium red chilli
  • 1 tsp ground cumin
  • half of 1 onion
  • 1 400g can of kidney beans, drained and washed
  • 1 440g can of chopped tomatoes
  • oil
  • seasalt and black pepper
  • a few handfuls of pumpkin seeds

Method

  1. Peel the patty pan squash and chop roughly into pieces. Place on a roasting tray and drizzle with oil, then roast for 20 mins at 180C.
  2. Heat a little oil in a frying pan, and add the garlic clove, crushed. Chop the chilli and onion and, as the oil begins to sizzle, add it to the pan with the ground cumin. Give it a stir and let it cook for a few minutes.
  3. Roughly blitz the kidney beans in a food processor with blade fitted. Add to the pan with the chopped tomatoes. Give it all a few good twists of seasalt and ground black pepper. Stir to mix, and let it cook for 4 – 5 mins to reduce.
  4. Chop the peppers down the middle to give four halves, and carefully trim out the seeds and white membrane from each, using a sharp knife. Brush the inside and outside of each half with a little oil.
  5. When the patty pan squash is roasted and nicely caramelised, scrape the pieces in to the food processor and lightly blitz. Add to the kidney bean mixture and stir in.
  6. Spoon the mixture into each half pepper, and press down with the back of the spoon to make sure the cavity is filled. Sprinkle a few pumpkin seeds on the top, and place back in the oven, still at 180C, for 25 mins.
  7. Remove and serve with accompaniment of your choice.

Customise It!

As shown in the photo, mine are served with seasonal baby potatoes and sprouting broccoli, but feel free to serve up with other favourite veg or whatever veg you have to hand. Couscous or rice would also make a good side.

I must admit to having a bit of a laugh when I saw the photo I’d taken, at the top of the post. Due to a combination of the background and the lighting, it looks like the stuffed peppers are about to travel off into deep space. However, that isn’t the milky way behind them – it is a roasting tray, and the only place they are about to travel to is a hot oven in the ADK KItchen.

It has given me an idea for the next track for the Playlist, however. It’s a song from the great R.E.M., whose music I have enjoyed for many years, including seeing them play live twice. Here they are with Man on the Moon.

Summer Berry Burst Muffins

This post sees seasonal summer berries, such as strawberries, raspberries and blueberries, generously packed into a cake muffin. The berries burst with joy as they bake, giving each muffin a unique, jammy appearance (as shown in my photo above) and a delicious, juicy, fruity taste.

It truly is food to put a smile on your face!

Servings

12 muffins.

Timings

15 mins to prepare, 25 mins to bake at 180C.

You Will Need

  • 220g plain flour
  • 3 tsp baking powder
  • half tsp salt
  • 110g caster sugar
  • 1 egg
  • 240ml milk
  • 90ml vegetable oil
  • 60g oats
  • 150g fresh berries (such as strawberries, raspberries, blueberries or blackberries)

Method

  1. Heat the oven to 180C. Prepare a muffin tin or mould for baking.
  2. Sieve the flour, baking powder, salt and sugar into a bowl. Stir in the berries and ensure all are covered in the floury mix.
  3. Break the egg into a second bowl and add the milk, veg oil and oats. Give it a good stir.
  4. Combine wet and dry ingredients and stir till combined, with no dry ingredients showing. Spoon the batter into your mould or tin, and bake for 25 mins at 180C.
  5. Allow to cool for a few minutes, then transfer to a wire rack to cool.

Customise it!

Other berries or soft fruit can be substituted – but please keep it fresh and local, going with what is in season in your area.

I did say this was food to put a smile on your face, so let’s keep that theme going with our latest musical choice. A Rush of Blood to the Head is still my favourite album by Coldplay. They have done some terrific stuff since, but in my view they have never bettered it. Here’s one of the many great tracks from the album – God Put A Smile Upon Your Face.

Leek, Bacon & Stilton Flan

It’s the time of year for quiche, eaten warm or cold while sitting on the patio in the summer sun. Perhaps enjoying a glass of fresh Elderflower over ice, or maybe even something stronger.

For me, leek, bacon and Stilton cheese is always a winning blend in a dish. The deep oniony taste of the silky, buttery leeks complements the saltiness of the bacon and the creaminess of the cheese. As my photo above (taken in the back garden sun) shows, the greeny blue hues of the toasted topped flan just make you want to tuck into a slice.

Serve this as a main accompanied by some side salads. If you need some ideas, check out Beetroot, Feta and Walnut Salad with Bulgar and Quinoa, Crunchy Fruit and Nut Pilaff, or Royal Blood Orange Salad.

Servings

4 adult portions.

Timings

The whole process takes around an hour: 10 mins to make the pastry, 10 mins to chill, another 10 mins to blind bake the pastry base, and then 25 mins to bake the flan.

You Will Need

  • 225g plain flour
  • pinch of salt
  • 100g spread or margarine
  • 2 – 3 tbsp cold water
  • 2 leeks
  • a knob of butter
  • 3 slices of bacon
  • 100g Stilton cheese
  • 2 eggs
  • 50g milk
  • a few twists of black pepper

Method

  1. Turn the oven to 180C. Grease and line a flan dish – the one I used (in the photo) is 22cm diameter.
  2. Sieve the flour and salt into a food processor with blade fitted, and add in the spread. Blitz until it resembles the texture of breadcrumbs. Add a few drops of the water until it binds into a lump of soft pastry.
  3. Tip out and wrap in cling film. Place in the fridge to chill for 10 mins.
  4. Meanwhile, wash the leeks and chop into a saucepan with the butter. Place over a gentle heat so that they soften in the melted butter.
  5. Chop the bacon into pieces and fry till browned and crispy.
  6. Take the pastry from the fridge and roll out on a floured surface to a size that fits your flan dish. Fit it into the dish and trim off any overhanging excess. Place a crumpled piece of baking paper inside and fill with ceramic baking beans. Place in the oven for 10 mins.
  7. Remove from the oven and discard the paper/ beans, taking care as they will be hot. Spread the softened leeks and bacon over the base, then crumble over the Stilton cheese.
  8. Mix the beaten eggs, milk and pepper in a jug, and pour carefully into the flan. Place in the oven for 25mins until cooked.
  9. Remove and serve hot, if you wish, or let it go cold. Serve it al fresco, with salads and cold drinks.

Customise it!

As I’ve said, I regard leek, bacon and Stilton as a classic taste combo, so wouldn’t change it. However, you could add other green veg for the leeks if you wish – broccoli would go well. You could also add grated cheddar or another favourite cheese, in place of the Stilton.

Happy Birthday

This week my blog is one year old.

Yes, it’s a full 12 months since I tentatively published my first post – Crunchy Fruit & Nut Pilaff. The idea was to blog about my twin loves of Good Food, Great Music, with a name inspired by the title of the first Buzzcocks album Another Music in a Different Kitchen.

Narrative posts would be published here twice weekly on Word Press, with shorter, more frequent updates on Twitter @differentkitch. Posts would be accompanied by a favourite music track, added to an ever growing Spotify Playlist.

113 posts, 382 tweets and 87 songs later, that is pretty much how things have panned out. Followers across my three chosen platforms currently total 1,371 – thanks to every one of you whether you have read, baked, or hummed along.

Total Word Press views have been 3,427, spread well (a bit like the jam shown below) across all kinds of recipe and post. However, the three most viewed posts suggest that you are a sweet toothed lot. Top is The Sweetest Feeling, about afternoon tea at the home of Tiptree jam in Essex, see below.

I’ve posted while on my travels over the year – from the Commonwealth Games in Birmingham, from Qatar, Australia (see below), and various parts of the UK. The roster of favourite bands whose live performances I have posted about include Roxy Music, Fatboy Slim, Elton John (shown below), Inspiral Carpets, Arctic Monkeys, Muse and Billy Joel. Phew – equalling that list will take some doing in the next 12 months. I will see what I can do.

Piano Man

This weekend I went to see Billy Joel play live at the British Summer Time Festival in Hyde Park, London.

Early on in the set, he announced that he had good news and bad news. The bad news was that he had no new songs to play. The good news was that this meant he would play all his greatest hits. Cue a loud cheer from the festival crowd.

And what an impressive roster of hits he has. I associated him most with easy listening, FM station-friendly ballads like Just the Way You Are and She’s Always a Woman. His set showed, however, a very much wider range of musical influences.

He’s in piano jazz territory with New York State of Mind, gospel in River of Dreams, and a capella with a hint of doo wop on The Longest Time.

His rock n roll side is there to see on We Didn’t Start the Fire and It’s Still Rock and Roll To Me. Then there are simply great pop songs like An Innocent Man, My Life, Tell Her About It and Movin’ Out.

It was clear that his backing band are very able musicians, and I liked the fact that, unselfishly, he gave over space to them to showcase their talents. This was unexpected and helped keep the set fresh. In the middle section of River of Dreams, the percussionist took centre stage for some powerful lead vocals as they segued into River Deep, Mountain High, Later in the set, the guitarist sang Nessun Dorma, with Billy accompanying him on the piano. The encore included a rousing version of A Hard Day’s Night.

Possibly the greatest reception came for Piano Man, his song about the hopes and fears of a set of characters in a New York bar, told from the view of the resident pianist. The whole of Hyde Park joined in the singalong chorus. Joe Jonas from the Jonas Brothers came on to help sing Uptown Girl, which must be a contender for the perfect pop song (and which I am adding to the ADK Playlist).

On one of the hottest days of the year, Billy Joel played all these hits and more, carrying on for 2 hours as the sun slowly set over London. Now in his mid-70s, I do not know if he will perform on these shores again, but if not, this was a special and memorable way to bow out.

Don’t Look Back Into the Sun

I recently spent a few days in Margate on England’s Kent coast. I had heard a lot about how it was regenerating itself from a classic, but decaying, traditional seaside resort into a modern centre for music and the arts, with independent cafes and eateries.

Beach, food, music and the arts – it sounded like my kind of place.

The town’s provenance as a centre for the arts is well founded. The long sea front has unbroken views facing west, and the quality of the natural light is what reputedly attracted classical artist JMW Turner to reside and paint here. The description of the light is accurate – there are cracking sunsets every evening, especially this time of year when the days are long (see my main photo above for one example).

This is the home of Tracey Emin, and the town’s heritage trail is full of references to other legendary Brits who have also made this their place of abode. Here is the vista that inspired TS Eliot to write his epic poem The Wasteland. Hawley Square, with imposing terrace houses looking out over a beautiful old public garden, has been home to John Keats, Lord Nelson and, erm, Hawkwind.

The artistic regeneration has been kickstarted by the arrival of the Turner Contemporary Art Gallery, built on the site of the guesthouse that Turner stayed in while visiting here. It has a huge window looking out to sea, dressed for our visit by Brazilian abstract artist Beatriz Milhazes. It reminded me of a stain glassed window, see below.

Dreamland, shown below, is a 1930s amusement park, restored to all its retro glory and serving also now as a venue for visiting bands. The summer programme includes Placebo and Queens of the Stone Age, so they are clearly having success in attracting top quality music.

Near the Turner, and just across from the main beach, is the Old Town. Programmed for clearance in the 1960s, it was, thankfully, saved and is now a thriving centre for independent shops and cafes. We enjoyed grabbing a takeaway coffee or sandwich and taking it over to eat on the beach. Takeaway of choice was Sub Rosa, which specialises in fresh bagels. Below is my soft, chewy and delicious ‘everything’ bagel with cream cheese.

It is impossible to tire of the views across the sands, see one example below.

In another direction, you may just spot one of Antony Gormley’s iron men figures gazing out to the horizon. Be warned, however – he does get completely submerged at high tide (the statue that is, not Antony Gormley, obvs).

While there is lots to enjoy and get excited about at Margate, I do need to add some note of caution and balance, before everyone signs up to a short break there. The regeneration is still, very much, a work in progress! The arty points of interest, vintage clothes shops, adventurous foodie cafes and cappuccino bars rub shoulders with a serious amount of shabby and decaying buildings, graffiti and neglected public spaces. If that sort of thing disturbs you, then it may be best to leave your visit till the rebirth of the town is a little further down the road.

With its juxtaposition of crumbling facades of a once great English seaside resort, artistic heritage and modern day grunge, you may be excused for thinking Margate would be the perfect place for those bohemian songsters, The Libertines, to open a boutique hotel. Well, guess what? Pete, Carl and co have invested in the Albion Rooms, a stylishly kitted out 8 room hotel with bars and music venue (see below). It also has a recording studio, which is used both by The Libertines and local indie bands.

So I will finish by adding The Libertines to the ADK Playlist. Here’s a track that could easily have been written about the glorious view from Margate’s beach, just across from the Albion Rooms. This is Don’t Look Back Into the Sun.

Paint Me Down (Under)

I want to share with you some of the great art in public places I’ve come across in Australia.

For reasons I can’t quite explain, my experiencing of art is inextricably connected with the consumption of coffee and pastries. Visit to a gallery? Sooner or later my wristwatch will be telling me it’s time to visit the coffee shop. Walking on a public art trail? I guarantee at some point there will be a minor detour to take in that nice, funky looking cafe over there. More about Australia’s cafe culture in a moment – let’s first take a look at some of the art.

I’ll start with the art deco entrance to Luna Park, Sydney’s retro amusement park that dates back to 1935, shown in my main photo above. It is a joy to behold – the huge grinning face is visible all the way from the other side of Sydney Harbour, getting progressively larger as you approach it on the ferry. If you look closely you will see visitors walking through the mouth to enter the amusement park, giving a sense of its vast scale.

My next photo below was taken at the graffiti wall which lines the promenade at Sydney’s famous Bondi Beach – a place where chic boutiques and upmarket cafes co-exist with the bohemian grunge of the local surfing community. Our visit here soon led to a visit to one such cafe (see, what did I tell you), from which we enjoyed the free entertainment provided by the surfers. This was easily the best surfing I have ever seen – well-poised riders catching a wave for a good 10 – 15 seconds before diving neatly into the water, then doing it all again.

Back in Melbourne, Hosier Lane is known as Spraycan Alley, making it a popular tourist attraction – see below. It is positioned in the Lanes and Arcades quarter chock full of fiercely independent cafes. A visit to at least one of these is inevitable (for me, that is) when in this part of town.

Indigenous art influences are strong wherever we go. The tall three-legged, two headed Angel (by artist Deborah Halpern) is situated in Birrarung Marr, the public park that stretches out along the River Yarra from Federation Square to the home of the Tennis Open.

Again in Melbourne, the whole of the ground floor of the Ian Potter Centre (free to enter) is given over to indigenous people’s art. The paint used is generally derived from rocks, minerals and clay, giving it an earthy feel, and a colour palette based around an ochre spectrum. The abstract designs and patterns evoke the meditational nature of the aboriginal philosophy known as the Dreaming. My photo below is an example, by artist Willie Gudabi.

And so to the world of coffee and pastry that I associate with these images. Cafe culture is big in Australia. They are nearly all independents – you will only very occasionally see a Starbucks or other chain. Baristas take their work very seriously, and the making of a hot drink has itself been elevated to something of an art form. I can honestly say I have never had a bad cup of coffee since arriving in Australia.

At first the coffee menus were like a different language, but I now understand my way around them. There is no such thing as an americano – it is a long black and, if you want it white, you ask for a small jug of milk (specifying whether it should be hot or cold, and dairy, oat or other) on the side. A batch brew is a filter coffee, and a cold drip is an iced version – usually a latte served over ice cubes and, in some places, a scoop of ice cream.

Cappucino and flat whites are as you would find in the UK but, surprisingly, decaff is nowhere to be found on the menus. Seemingly this is because the serious coffee aficionados do not consider it to be a credible option. While there is no doubt that Australia makes great coffee, I do think this is one area where the approach is a little out of step with modern times.
